4 Ingredient Shortbread Cookies

Happy Valentines day one day late! jaja. I hope you had a very lovely day yesterday <3 . So this week I'm on holidays and I wanted to share with you a very easy and not much time consuming recipe. Today’s post is on Shortbread cookies. The best and softest biscuits in the world! I actually first knew about this cookies when a good friend of mine made them in the summer, and when I tried them I was immediately in love with their soft taste, but especially with their amazing texture. And the best part is, that they only need 4 ingredients and 1 hour to be made!

For the Biscuits:
225g of softened salted butter
125g of icing sugar
340g of biscuit flour
1tbsp of vanilla extract


Sift the flour in a large bowl, set aside. Now in a medium bowl cream the softened salted butter and the icing sugar until they are creamy. (By the way, I made this recipe only using a hand whisk and a spatula, there’s no need to use an electric mixer!). Now add in the sifted flour all at once and begin to combine the mixture with a spatula. When the mixture is nearly combined, pour it out onto a clean surface and knead it very gently for 30 seconds. Don’t over knead this mixture, as it will result in tough cookies! :D.



Refrigerate the dough for 1 hour in the fridge. When you take it out spread it out onto a floured biscuit tin with a rolling pin. Cut squares/rectangles from your dough and sprinkle the tin with icing sugar.Also poke some holes in the biscuits with a fork.Now place them into a preheated oven at 150ºC for about 45 minutes, or until they’re lightly golden on the edges. Before taking the cookies out of the tin, you must re-cut the cookies as they will have spread and the cuts you made before will nearly be inexistent. Leave the biscuits on a cooling rack until they are completely cool.




If you’d like to make them more fancy (as I did), you could make a simple glaze with powdered sugar and water. You could also add food colouring if you please.

I really, really hope that you try and do this recipe, as it is the easiest recipe ever!!! If you make it, you will definetly need to make these again this month as they are seriously addicting!
