Easter, The Spanish (Mallorquín) Way

Easter time!

This isn’t really a recipe post, but I still wanted to show you a typical savoury dish that my grandma always makes for Easter and a typical pastry we make here in Mallorca also for Easter.

The first is cod cakes. Basically, small omelettes heavy on garlic and parsley. They are fried in good olive oil and are typically around 10 cm wide.

The sweet pastries are called Robiols. The dough is typically made with lard, eggs, oil, orange juice, flour and sugar. The typical fillings are jams, chocolate spreads and cottage cheese and lemon.

Here are just some pictures of making the dough with my family.

Once the filling is on the dough rounds, you will fold the dough over and seal the edges with a fork, then they go into the oven at 180. They should end up looking something like an empanada.

Every family has their own recipe and choice of filling for these, so you really have to experience these at someone’s house or a classic bakery in Mallorca.

Lots of love,

Lucia x
